Famed Monégasque chef Alain Ducasse, which operates a number of restaurants including Alain Ducasse at The Dorchester, opens his first chocolate boutique in Paris. Le Chocolat Alain Ducasse, a 30-year-old dream for the Michelin-starred chef, is located in the heart of Bastille and will offer a bean-to-bar chocolate shop experience. From cacao beans roasted on-site to the final pralines and ganaches, Ducasse imagined a heaven to inspire local and visiting chocolate gourmands. The chocolate boutique will have an industrial feel with exposed brick walls.
Ducasse will work with cacao beans sourced from Madagascar, Venezuela, Peru, Trinidad, and Vietnam, while the bonbons will be manufactured with pistachios, peanuts, hazelnuts and dried fruit, and flavored with prune-Armagnac, coconut-passion fruit, blackcurrant, mint, vanilla, coffee and lemon-tea.
Chef Alain Ducasse has also opened a cooking school for the general public in Paris and another for chefs (ADF), which also works for the European Space Agency to develop astronaut meals to be taken into space.[6] Ducasse has also authored numerous books, with the most famous being Alain Ducasse Culinary Encyclopedia. In 2005, Ducasse opened his first Asian restaurant in Tokyo, Japan.
The latest opening on the already saturated Parisian chocolate scene includes Ladurée‘s first shop dedicated to chocolate. Les Marquis de Ladurée is an 18th-century-inspired boutique that sells luxury tea and high-end chocolate products. Read more here
